From Our Kitchen - Orzo Salad

This simple pasta salad is a light and refreshing summer lunch option that our chefs at The Kitara Lodge often make for guests.

Ingredients

Orzo (pasta rice)

Various vegetables - zucchini, yellow patty pans, spring onions, red pepper or yellow pepper.

Goats cheese

Black and white sesame seeds

Parsley

Dill

Fresh Radish

Olive Oil, salt and pepper

Lets Get Cooking!

Sauté the vegetables in the olive oil until crisp, season them and set aside. Cook the orzo pasta as per the packet instructions and then drain. Roll the goats cheese into small balls and then roll them through the sesame seeds. Roughly chop the herbs and toss through the orzo along with the vegetables, sliced radish and goats cheese.
